Ingredients
This is an approachable and delicious version of the Catalan dish, Fideuà. It is made with short strands of artisan pasta and fresh seafood, and is usually served withall i oli.
Method
Heat the oven to 180C
Toast the fideus until they turn a dark golden brown colour - approx 15 minutes - turning the noodles during cooking so that they are toasted all sides.
Meanwhile put the stock on a very low heat and hold just below simmering, ready for adding to the fideus.
Heat the olive oil in a four person paella pan over a medium-low heat, add garlic cloves and cook slowly to give some flavour to the oil; when the garlic cloves are golden brown, remove from the oil and discard*
Add the prawns and cook 1 minute per side; remove from pan.
Now add the squid and cook it for 2 minutes; after this time, add the grated tomato, cooking for a further 3 or 4 minutes until thickened; stir in the paprika and crumbled saffron and cook for 1 minute.
Add the fideus and stir well to coat, then add half of the warmed stock; place the mussels and the peas around the pan then cover with the remaining stock.
Bring the pan to a gently rolling boil and cook for 5 minutes (try the stock now to check if the amount of salt is right and if not amend accordingly).
Add the prawns and cook for 4 more minutes.
Remove from the heat, cover, and leave it to stand for 3 minutes.
Serve with a little bit of all-i-oli.

2 Knollen chin. Knoblauch (oder entsprechende Menge normalen)
1 grosse Zwiebel
1 Kilo Garnelen 13/15 mit Schale
1 Kilo Tintenfischtuben
2 Fischfilet (ich hatte Wels)
ca. 60 Stück Miesmuscheln
500g Tomaten
5 Packungen Safran
1/8l Fischfond-Konzentrat
3l Wasser
1 Packung Zuckerschoten
Pimentón dulce, mein Tip hier ist "Jalapeno-Chili rot, gemahlen, extra fruchtig" von Spiceworld

Nudeln ins Rohr, bei 200°C bräunen, alle paar Minuten durchmischen, Ziel ist "dunkelgoldbraun"
Zwiebel kleinhacken
Knoblauch ebenso
Tintenfischtuben und Fischfilet in Stücke schneiden
Tomaten zerkleinern
Zuckerschoten Enden entfernen und dritteln
Alles auf einem eigenen Teller bereithalten

- 600g clean squid chopped into 1cm pieces (you can cut it bigger if you want)
- 2 good-sized tomatoes (about 250g), halved and grated (discarding the skin)
- 1½ tsp pimentón dulce
- 10 strands of saffron, crumbled
- 900ml of fish stock
- 400g of mussels in their shells
- 70g of peas
- Salt to taste

Los gehts:
- Pfanne rauf, gut Öl rein, Knoblauch rein, gemütliche Hitze, wenns prasselt Garnelen dazu und mit dem Knoblauch beidseitig anbraten, nicht zu lange sonst wird der Knoblauch bitter.
- Garnelen raus, Knoblauch bleibt, Tintenfischstücke rein, bissl Öl nach, selbes Spiel, Knoblauch sollte am Ende leicht braun sein
- Tintifax raus, Ziebel und Tomaten rein, mit dem Saft der Tomate sollte sich jetzt der Bratensatz lösen.
- Wenn die Tomaten verflüssigt sind mit 1/2l Wasser aufgiessen und Tintenfisch, Welsfilet und Zuckerschoten dazugeben. Safran drüber und mal umrühren
- Jetzt die Nudeln dazu und einen weiteren Liter bis 1 1/2 Wasser + Fondkonzentrat (Alternativ nur Fischfond ausm Glas), vorsichtig rühren damit die Nudeln benetzt werden. Mit Jalapulver oder Pimentón dulce würzen
- Muscheln rein
- Ein paar Minuten kochen bis die Nudeln weich werden, immer wieder aufgiessen und umrühren
- Garnelen dazu
- Jetzt heisst es warten und abschmecken, immer wieder durchmischen und wenn die Nudeln die richtige Konsistenz haben dann isst man zuerst mal selber etwas und dann verständigt man die Meute (hab ich ausm Schluchten-OT gelernt, hab nix erwischt)
