Die Woche mal ein Brisket / This week a brisket

For good friends in Michigan and newcomers to the Weber virtual bullet, I added some english comments. Ronny, have fun with the bullet, won´t regret it!

Today a 7.5 pound brisket jumped in our shopping basket. So its time ti test Cabelas Bristet spice...

For all: They saw some smoke signals in our garden from time to time. They decided for a 18.5 inch vertical bullet.

Also dann mal das Cabelas Brisket Gewürz ausprobieren.....

Tommorrow we will add attional from this rub and then we put it in the Weber Virtual Bullet, where else.

Took the friend from the brine and cured it generously with the rub. Now its all on the deck, covered, and waits for afternoon/evening in the bullet. The idea is to get it ready to noon tomorrow.

This morning we will visit a friend. She is in hospital at the moment. We are afraid of her.

So, my wife wants to join a classic concert in Grossenaspe about 15 miles north of our place. Just prepared the bullet with 10 pounds charcoals and six beech chunks. When we are back, we start. The friend sleeps covered in two stainless steel boxes from the Sweden store with the yellow logo.

Niteshift as usual. Before sleeping add water, then sleep well to morning. This is it, the bullet. Totally boring, love it...

Wird ne ruhige Nachtschicht wie immer. Vor dem Schlafengehen noch mal Wasser nachkippen. Dann bis zum Morgen Ruhe.... So isser der WSM. Total langweilig, total gut. .......

Bis nachher.

:mornin::kaffee: Mornin´, just checked it up: Added 1.5 gallons water and 12 pounds charcoal (there wasn´t much left). Temperature 112 C at the grate / lid. All good valued. Core temperature 73 C (goal is 95). At 230 am checked it up, 128 at the grate, 70 C core. So we are at the stationary phase (plateau phase). Let´s get the long run start. Easy to this point....

Get a coffee, relax and enjoy....

(Rem: When running a bullet don´t cry about 20 pounds charcoal. Its fun to run it; the result is non-beatable)

:D:-):whip::mornin::kaffee: Moin Jungs & Mädels,

Gerade mal nachgesehen: 5 l Wasser nachgekippt. Also voll inne Blödphase. Ab jetzt gehts auf die Strecke. Bisher Peanuts.

:smoker:

Quick update: The charcoals ignited as usual without problem. All good. Now added the remaining charcoals from the bag about 18 pounds; refill the water pan to the maximum. Four galons have gone already. When replenishing this morning a gallon was still left.

Ready to go for a walk. Update follows. Carry on to enjoy the monring cup.
:kaffee:

Just returned from walking, wonderful morning, just about right. It was time to check the WSM, so boring :-) Running as it should. Getting ready with three pork toungs which been cured since last eve with McCormick Pork dry rub (find it at every Walmart). Then checked out the brisket and put the three toungs just around it. Coretemperature set to 65 C. Added two beech chunks to the coals and go.

Core temp of the bristket is 78 C (174 F), so threre is a way to go. The goal is 95 C (203 F). Looks like that the plateau phase is over. Don´t worry there is a second coming.....

Gerade vom Gehen retour, toller Morgen, genau richtig. Versuch mact kluch..... Also zwei Buchenstücke auf die Kohlen, Sichtprüfung des Briskets. Sieht schon ganz geil aus.

So sieht´s aus....

Check the brisket. First time we lift the lid. In the background the tongs. Grouped them around the brisket.

After opening the lid the temperature fell somewhat. The core temperature raised to 78 C (172 F). The thing advances.(Because of the water in the pan the temperature picks up quickly when putting the lid back.)
